There’s nothing like coming home on a cold winters day and having soup ready in the crock pot. That is, if you remembered to put it on before you leave for work. Most of the time I plan on cooking in the crock pot I forget to put it on in the morning and then scramble to make dinner the “faster way” on the stove top. So I was so happy when I bought my Instant Pot and found that I could make delicious dinner in a fraction of the time. It’s so fast and easy!
This recipe I’m going to teach you how to make Healthy Corn Chowder in 10 minutes! You heard that right! Its super fast and tastes sooo goood! Of course I change out a few ingredients to make it Healthyish. I swap the half and half for 1% milk, use Olive Oil instead of butter, Chicken Bone Broth instead of chicken stock, turkey bacon instead of pork bacon and Arrowroot Powder instead of cornstarch or flour.
Let’s get started! Get all your ingredients ready. Frozen corn, potatoes, celery, onion, 1%milk, chicken bone broth, turkey bacon, Arrow Root Powder, Italian Seasoning, Olive Oil, salt and pepper. I think it makes it easier if everything is out on the counter so there’s no running back and forth to the fridge and pantry.
Dice the onion, I usually use my food processor for this because I HATE dicing onion and my husband can’t stand it either. So I cut the onion in half and pulse them in my Cuisinart Food Processor for a 30 seconds. Just like that the onions are chopped and no one’s crying LOL!
Get your Instant Pot out and set the setting to Saute add your olive oil let heat and then add the onions to the pot.
The onion cook pretty quick so move fast and chop your potatoes, celery, and turkey bacon. Add them to the onions and turn the Instant Pot off by pressing “Cancel”.
Now all that is left to do is add the rest of the ingredient to the Instant Pot. So start with adding the Chicken Bone Broth, Italian Seasoning, salt and Pepper. Close the lid on the Instant Pot and set it to High Pressure for 10 minutes making sure the pressure release on the top is closed. It will start to pressurize and then cook for 10 minutes
When the 10 minutes on the Instant Pot is done release pressure valve on the top of the lid and wait till the small silver ball drops, this means the pressure is low enough to open the lid.
Now all you have to do is add the Arrow Root Powder and Milk. Here’s a picture of my Arrow Root Powder. I like to keep this stuff on hand as a healthy alternative to flour and cornstarch for thickening. It works just as well, does not have any weird taste and is a great substitute! I store it in a Mason Jar to keep it fresh!
Mix your Arrow Root Powder with your cold milk with a wire whisk. Whisk it until there are no lumps. Who wants lumpy soup! Yuck! Add the milk mixture to the hot soup in the Instant Pot and stir. It will start to thicken right away. Taste and add salt and pepper if needed and presto! It’s done! I serve mine with some low-fat colby jack cheese sprinkled on top and if I’m really hungry a whole wheat dinner role. I hope you enjoy this recipe as much as I do! It’s a homemade meal that is fast and the whole family will love!

Healthy Instant Pot Corn Chowder
2 Cups Frozen Corn
5 Medium Red Potatoes
2 Stalks Celery
1 Onion
1 Cup 1%milk
3 Strips Turkey Bacon
3 Tablespoons Arrow Root Powder
1 Teaspoon Salt (or to taste)
1/4 Teaspoon Pepper (or to taste)

Directions:

7. Taste and add salt and pepper if needed
8. Top with shredded colby cheese or serve with a whole wheat dinner role.
